Rooster piccata with Asian salad
A lightweight and digestible meal of hen breast wrapped in a layer of egg and cheese and served with a salad with Asian flavours. A delight.
Important course For four folks
2 hen breasts of approx. 180 g every
1 teaspoon of Asia spice mix
2 tsp crushed cayenne pepper
50 g of cheddar
2 tablespoons of flour
eight tablespoons of rapeseed oil
250 g of sliced salad, such because the gardener’s salad
three tablespoons of rice vinegar
1 tablespoon of sesame seeds
1 teaspoon of liquid honey
The right way to proceed
Preparation: approx. 30 minutes
Halve the hen breasts horizontally. Season with the Asia spice combination and salt. Beat the eggs in a deep dish and drizzle with cayenne pepper. Add the finely grated cheese. Pour the flour right into a second deep dish. Cross the hen first within the flour after which within the egg and cheese combination. Brown the hen on either side in half the oil for approx. 6 minutes. Season the salad with vinegar, sesame, honey and the remainder of the oil. Season with salt and serve with the piccata.
